Chana Dal Mixed Vegetable Curry


Dear Readers,

I am sharing a frequently cooked lunch/dinner recipe in my kitchen Chana Dal Mixed vegetable Curry. We make frequent use of various lentils in our daily cooking. This delicious and protein-packed nutrient rich healthy curry is easy to make and loved by all my family members.

This creamy ,smooth delicious Chana Dal vegetable curry is made with skinned split chickpeas, any of your favorite vegetables, onions and tomatoes.

You can relish this delicious curry with hot steamed jeera rice or any type of Indian breads like parathas, roti, garlic naan etc.

My husband is also an excellent cook and great foodie. We both enjoy cooking many such recipes together in our kitchen. He also loves to critic my recipes so i try to put forward my best to please him.


Ingredients

Potatoes (3-4 Medium sized)
Brinjal (3 Small size) (cut into small pieces)
Onion 1 (chopped into long pieces)
Pumpkin (8 to 10 pieces)
Garlic (3 to 4 cloves – smashed)
Chana Dal (150 – 200 gm- 2 small cups)
1 Tomato
Turmeric Powder 1 tbsp
Red chilli powder 1 tbsp
Salt to taste
Curry Masala 1 tbsp
Ghee 2 tbsps
Oil – 2 tbsp
Ginger garlic paste – 1 tbsp
Mustard seeds – 1 small tbsp
Cumin seeds – 1 small tbsp
Red chilli’s -1 – broken into 2 to 3 small pieces
Finely chopped Coriander leaves for garnish

Step1: Cooking the lentils – Chana Dal

Rinse and Wash the chana dal and soak it for 30 mins and add some salt. Then Pressure cook it with 4 to 5 whistles OR you can boil it for 30 to 40 mins in a stockpot with the lid covered and keep stirring in between so that it doesn’t stick to the bottom. (Add 2 cloves of garlic)

Step2: Saute the vegetables

Add 2tbsp of oil to a cooking pot. Fry the chopped onions till they are golden brown.Then add Ginger garlic paste and fry for another 3 to 5 mins. Add the cut vegetables and fry them and cover the pot.After 3-4mins of cooking, Add masala’s i.e turmeric powder, red chili powder and any vegetable/curry Masala powder and continue stir frying. Keep stirring in intervals till all vegetables are half cooked.

Step3: Prepare the Chana Dal curry

Add the pressure cooked/boiled chana dal in to the stock pot and give it a stir so that the dal is mixed well with the fried vegetables. Covered the pot and let it cook for another 5 to 10 minutes till it is simmered fully. Transfer the cooked chana dal mix vegetable curry in a bowl and Garnish it with coriander leaves.


Step4: Prepare the Tadka/Fodni.

In a small bowl, add 1tbsp oil and when the oil is fully heated, add cumin seeds, mustard seeds. Wait few secs until they make a cracking sound. Add the red chili pieces, 1-2 pieces of diced onions, add 2 garlic cloves (smashed or chopped). Fry this for a min and add this tadka/fodni to the Chana Dal curry to enhance the flavor. Add ghee and cover and let it cook for 2-3 mins.

You can serve the curry with any side dish like steamed rice or parathas.
